Sesame cream or puree

Sesame cream or puree or tahini is a thousand-year-old preparation in Mediterranean and Asian cuisine.

The difference between the names "cream" and "purée" only indicates the percentage of an ingredient.

If the preparation contains 100% blond or black sesame, it is a puree, such as an almond or hazelnut puree.

If the preparation contains a mixture with other ingredients then it is a cream.
